FANCY CUBE STEAK 
1 med. onion, chopped
3 tbsp. butter
1 1/2 c. sliced fresh mushrooms
3/4 c. beef broth
3 tbsp. flour
6 cube steaks
3/4 c. apple juice

In frying pan, cook onion in 1 tablespoon of butter for 5 minutes. Stir occasionally. Add mushrooms, cook on moderate heat for 5 minutes, stirring occasionally. Add apple juice and broth. Cook on high until liquid is reduced by half. Set aside.

Combine flour and some pepper, dredge steaks in mixture. Brown steaks in remaining butter (3 to 4 minutes a side). Pour sauce over steaks and simmer until sauce thickens.
