BAKED PINEAPPLE TAPIOCA FOR
DIABETICS
 
2 c. crushed pineapple in own juice
1/2 c. pineapple juice & add water to make the 1/2 c.
2 tbsp. + 2 tsp. quick cooking tapioca
1/4 tsp. lemon extract
Dash of cinnamon
3/4 c. hot water
Sweet-n-Low equivalent to 8 tsp. sugar

Preheat oven to 325 degrees. Use 1 quart casserole. Combine all ingredients. Mix well. Let stand 10 minutes. Bake uncovered 40 minutes or until tapioca granules are clear. Serve hot or cold. 98 calories per serving. 1 fruit exchange. Makes 4 servings.
