ITALIAN MACARONI AND CHEESE 
1/2 c. chopped onion
1/4 c. chopped celery
1 clove garlic
4 tbsp. oil
1 can tomato paste
2 1/2 c. water
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. basil or oregano
1/4 tsp. sugar
1/4 lb. lg. macaroni, cooked and drained
1 lb. (2 c.) cottage cheese
Grated cheese

Cook onion, celery, and garlic in oil until soft. Remove garlic. Add tomato paste mixed with water and seasonings. Bring to boil. Lower heat; simmer 1 hour.

In shallow baking dish, put a thin layer of sauce, sprinkle with Parmesan, and top with half of the macaroni. Add cottage cheese, cover with half the remaining sauce, sprinkle with Parmesan. Add macaroni and last of sauce; sprinkle top generously with grated Parmesan. Bake at 350 degrees for 30 minutes.
