LEMON COCONUT LOAF 
1 c. butter
2 c. sugar
3 tbsp. lemon juice
4 eggs
3 c. flour
2 tsp. baking powder
3/4 tsp. salt
1/2 c. evaporated milk
1/2 c. milk
1/2 c. flaked coconut

Preheat oven to 350 degrees. Grease two loaf pans (8 x 4 inches). In large bowl, beat butter, sugar and lemon juice with electric mixer. Add eggs, beating well. Mix together flour, baking powder and salt. In small cup, mix evaporated milk and milk. Add alternately with flour mixture. Fold in coconut. Divide between two pans and bake 1 hour, 20 minutes. Remove from oven. Prepare Glaze.

GLAZE:

1/2 c. lemon juice
1 c. sugar

Brush over tops of loaves. Cool 20 minutes in pans. Remove to wire racks to cool.
