ZUCCHINI BREAD 
3 eggs
2 c. grated zucchini
1 c. oil
2 c. sugar
1/2 c. milk
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/2 c. chopped walnuts

Blend eggs, zucchini, oil, sugar, and milk. Add dry ingredients. Mix well. Add walnuts. Pour into 2 well-greased and floured loaf pans. Bake at 325 degrees for 1 hour. Makes 2 breads.
