ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 tsp. salt (opt.)
1 tsp. cinnamon
3/4 c. milk
3/4 c. coconut (opt.)
3/4 c. oil
3 c. grated zucchini
2 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder

Sift together dry ingredients. Add eggs, milk, oil, vanilla and zucchini. Mix by wooden spoon. Grease and flour 2 loaf pans or 2 (1 lb.) coffee cans. Pour in batter (filling coffee cans within 2" of top). Bake at 350 degrees for 1 hour.
