BUBBLE AND SQUEAK 
This may be a strange sounding dish to Americans, but it is dearly loved by the Irish. The bubbling and squeaking in the skillet as it cooks are the sounds of witches and ghosts trying to escape from the fiery heat! Not surprisingly, it is traditionally served on Halloween night.

1 small onion, finely chopped
2 cups shredded cabbage, boiled for 15 minutes
2 cups mashed potatoes

Heat the butter in a large skillet and fry the onion over low heat for 5 minutes until softened. Add cabbage and stir over low heat for 2 minutes. Fold in the mashed potatoes until well blended with the cabbage. Press mixture lightly onto the surface of the skillet to form a large pancake. Cook for 5 minutes until the underside has browned lightly. Turn and brown on the second side for five minutes.

Makes 4 servings.

Bubble and squeak is almost identical to colcannon which IS an Irish dish served around Samhain (Halloween).

A traditional dish in my (Irish) family is ham boiled with potatoes & cabbage. The leftovers are always fried up in a pan - mostly potatoes & cabbage with a bit of ham. It's never been given a name but it is very similar, if not identical, to bubble & squeak.

This is good, hearty, cheap comfort food. Thanks for the idea. I grew up eating Polish food and these flavors are very familiar to me. I think I will cook the next batch in bacon fat... I know gramma would have.

I prefer my bubble and squeak with boiled potatoes. And I use a little bacon fat, a little lard and veg oil. Add the bacon and some sausage... Wonderful!!
