BEER CHEESE CHOWDER 
1/4 c. finely chopped onion
2 tbsp. butter
1/4 c. all-purpose flour
2 c. milk
1 can beer
1 c. chicken broth
1 c. diced carrots
1 1/2 c. diced (cubed) potatoes (I use more)
Dash of salt & paprika
1/2 tsp. pepper
1/2-1 c. cubed Velveeta

Saute the onions in the butter until lightly browned. Add the flour and make a paste. Slowly add the milk, stirring constantly. Add the beer, chicken broth, carrots and potatoes. Cook over medium heat until the vegetables are tender. Add the cheese, stirring occasionally until it is melted. Serve with warm bread sticks.
