CORNBREAD CRUST PIZZA | |
1 pkg. (12 oz.) corn muffin mix 1 c. flour 1/2 c. grated Parmesan cheese 2/3 c. milk 1 lg. egg, beaten slightly 1 med. zucchini, shredded (2 c.) 16 oz. pkg. bulk turkey sausage 8 oz. pkg. mushrooms, sliced 3 c. shredded Mozzarella cheese 3/4 c. pizza sauce Preheat oven to 400 degrees. Grease 14 inch pizza pan. In large bowl stir corn muffin mix, flour and Parmesan cheese. Add milk, egg and zucchini. Mix with spoon until just blended. Spread batter in pizza pan. Bake 18 to 20 minutes until golden. Meanwhile, in skillet over medium high heat cook sausage until brown, breaking up with fork. With slotted spoon remove sausage to bowl. In remaining drippings over medium heat cook mushrooms until tender. Sprinkle baked crust with 2 cups Mozzarella cheese. Spread pizza sauce over cheese to within 1 1/2 inches of edge of crust. Top with sausage and mushrooms. Sprinkle with remaining cheese. Bake 10 minutes or until heated through and cheese is lightly browned. Serves 6. |
