ROAST PORK, CHAR SIU STYLE | |
4 lbs. of pork, Boston butt MARINADE: 1 1/3 c. white sugar 2 tbsp. red bean curd 2 tbsp. soy sauce 1 tbsp. wine, dry sherry 1 tsp. Chinese five spices 2 tsp. salt 1/2 tsp. red food coloring Cut pork into 1 inch thick slabs. Soak pork slabs in marinade overnight. Bake for 1 hour at 350 degrees, turning at intervals. VARIATION #1: 1/2 c. honey 3 cloves garlic, minced 1 tbsp. oyster sauce The above ingredients may be added to the basic marinade above. VARIATION #2: 2 c. brown sugar may be substituted for the 1 1/3 c. white sugar VARIATION #3: 5 lbs. chicken wings may be substituted for the 4 lbs. of pork butt COMMENTARY: This well known popular item is frequently included in numerous Chinese dishes, especially in noodle dishes. |
