COFFEE CAKE MUFFINS | |
1/2 c. brown sugar 1/2 c. chopped nuts 2 tbsp. flour 2 tsp. cinnamon 2 tbsp. melted butter 1 1/2 c. sifted flour 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1/4 c. shortening 1 egg, beaten 1/2 c. milk Combine brown sugar, nuts, flour, cinnamon and melted butter. Set aside. Sift dry ingredients into a bowl. Cut in shortening. Combine egg and milk and add to flour mixture. Stir until just moistened. In a greased muffin tin, spoon small amount of batter, add layer of nut mixture, add more batter, and top with nut mixture. Repeat until 2/3 full. Bake at 375 degrees for 20 minutes. Makes 1 dozen. |
