COFFEE CAKE MUFFINS 
1/2 c. brown sugar
1/2 c. walnuts, chopped
2 tbsp. flour
2 tsp. cinnamon
2 tbsp. melted butter
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. cooking oil
1 beaten egg
1/2 c. milk

Topping: In small bowl, mix (with fork) brown sugar, nuts, 2 tablespoons flour, cinnamon, and butter; set aside.

Mix together remainder of ingredients. Put 1/2 of batter in bottom of 10 to 12 muffin cups. Sprinkle 1/2 of topping mix over batter. Cover with remaining batter. Sprinkle with remainder of topping. Bake at 375 degrees for 20 minutes.

Variation: Add 1 diced apple to batter.
