COFFEE CAKE MUFFINS 
2 1/2 tbsp. butter
1/2 c. sugar
1 sm. egg
1/2 c. cream or milk
1/2 tsp. vanilla
1 c. flour
1/4 tsp. salt
1 tsp. baking powder
2 tsp. sugar
2 tsp. brown sugar

1. Preheat oven to 350 degrees. 2. Cream butter and sugar. 3. Add egg, cream or milk, and vanilla. 4. In a measuring cup, mix flour, salt and baking powder. Add to butter-sugar mixture and blend well. 5. Grease 6 muffin tins. Fill each halfway with butter. Sprinkle with mixture of 2 tsp. sugar and brown sugar. Top with more butter. Don't fill muffin tins to top. 6. Bake 30 minutes. Let rest 1 minute before unmolding.
