BANANA COFFEE CAKE MUFFINS 
2 1/2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee
1 tbsp. hot water
1 1/3 c. mashed ripe bananas
1 c. butter, softened
1 1/4 c. sugar
1 egg

Preheat oven to 400 degrees. Grease 12 large muffin tins. In large bowl sift flour, baking powder, baking soda and salt.

In separate bowl mix coffee and water. Stir in bananas; reserve.

In large bowl cream butter and sugar until light and fluffy. Beat in egg. Mix in banana mixture. Stir in flour mixture. Divide batter evenly. Bake 25-30 minutes or until toothpick comes out clean. Makes 12 large muffins.

Great muffins. I made them a little healthier by using whole wheat flour for 1/2 the called for amount, 1/2 c. of butter and 1/2 c. of nonfat Greek yogurt (in place of 1 whole cup of butter). Also cut the sugar by 1/3. My recipe called for chocolate chips to be mixed in. Added a nice touch. More like dessert. My kids LOVED them!
