CHEESECAKE MUFFINS 
3/4 c. sugar
2 eggs, lightly beaten
2 (8 oz.) cream cheese, softened
1 tsp. vanilla
1 tbsp. sour cream (may use up to 1/2 c.)
Vanilla wafers
Chocolate chips, if desired

Beat, use electric mixer if desired, all above in bowl. Pour into muffin cups, lined with paper liners, and 1 vanilla wafer in bottom of each liner. Bake 15 to 25 minutes in 350 degree oven. Cool and refrigerate.
