ZUCCHINI PIZZA 
4 eggs, beaten
1/2 c. Italian cheese
1/2 c. oil
1 c. Bisquick
3 c. zucchini, shredded
1 c. pepperoni, diced
1/2 tsp. salt
1/2 tsp. oregano
2 tbsp. parsley
1 tsp. garlic powder
Pepper to taste

Spread in a 13 x 9 inch pan and sprinkle with 1/2 cup Mozzarella cheese. Bake at 350 degrees for 30 minutes.
