BAKED SQUASH 
3 lbs. yellow squash
1/2 c. chopped onion
1/2 c. cracker meal or bread crumbs
2 eggs
1 stick butter
1 tbsp. sugar
1 tsp. salt or to taste
1/2 tsp. black pepper or to taste

Wash and cut up squash. Boil until tender. Drain, then mash all ingredients except half of butter. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake at 375 degrees for approximately 1 hour or until brown on top.
