APPLE PANCAKE PUFF | |
6 eggs 1 c. milk 1/2 c. orange juice 1 c. flour 1/2 c. sugar 1 tsp. vanilla 1/4 tsp. cinnamon 6 tbsp. butter 2 apples, peeled and thinly sliced 1 tbsp. brown sugar Chopped nuts (optional) Melt butter in deep pie pan in oven at 350 degrees. Add apples to baking dish and return to oven until butter sizzles. Do not let brown. In a blender mix together the rest of the ingredients (except brown sugar and nuts). Pour batter over apples in pie pan. Sprinkle with brown sugar and nuts and some extra cinnamon. Bake at 425 degrees for about 20 minutes or until puffed and brown. It should set up like a quiche. Let stand for 10 minutes before serving. Serves 6-8. |
