PUFF PANCAKES 
6 eggs
1/4 c. orange juice
1 c. flour
1/2 c. sugar
1 c. milk
1/4 tsp. salt

Place above in blender and blend well.

1/4 lb. butter

Melt butter in 13 x 9 inch pan in oven at 425 degrees until butter sizzles - do not let it get brown!

Pour batter into pan and mix batter with butter. Bake 20 minutes at 425 degrees until pastry is puffed and light brown. Serves 8.

FOR DESSERT - Slice and serve with fresh berries or peaches and top with whipped cream.

FOR BRUNCH - Serve with bacon and sausage (prepared beforehand) and top with "Very Berry Syrup" (recipe follows).

VERY BERRY SYRUP:

2 tbsp. butter
1 c. maple flavored syrup
2 c. sliced strawberries
1 c. blueberries

Heat syrup and butter in 2 quart saucepan - low heat until melted. Stir in blueberries and strawberries. Heat until hot and serve with puff pancakes.

My aunt has been making this recipe for our family for the past 13 years. Once I got my own place, I started making it for breakfast for all of the holidays. This recipe is delicious and goes well with just syrup and/or whipped cream. My whole family loves it.
