PUFF PANCAKE 
1/2 c. milk
2 eggs
1/4 c. butter
1/2 c. flour
About 1/4 c. confectioners' sugar

In small bowl, beat eggs lightly, add milk and flour. Beat with fork until blended; batter does not need to be smooth.

Melt butter in 12 inch pizza pan or skillet (iron skillet seems to work best). Pour batter into middle of pan on top of melted butter.

Bake at 450°F for 15 minutes. Pancake will puff up in a peculiar shape.

Sift sugar over top, then cut into wedges with pizza cutter.

Serve with fresh fruit or preserves.
