BAKED HAM OMELET 
1/2 lb. Muenster cheese
1 c. finely diced cooked ham
1/4 c. melted butter
1/4 c. flour
1/2 tsp. baking powder
6 eggs
Salt, pepper, Tabasco
8 oz. small curd cottage cheese

Saute ham briefly in 1 tablespoon of the butter. Melt remaining butter in 9 x 9 inch baking dish. Beat eggs, season lightly; add flour, baking powder, Tabasco, ham, the cheese and half the melted butter.

Coat baking dish well with remaining butter, covering bottom and sides. Pour in egg mixture. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake about 10 minutes longer until omelet is puffed and golden on top. Cut into squares.
