EGG BAKE 
1 dozen eggs, slightly beaten
1 lb. Monterey Jack cheese, shredded
2 c. diced ham
1/2 c. flour
1 tsp. baking powder
1/4 c. melted butter
1 pt. sm. curd cottage cheese
1/4 c. butter

Combine slightly beaten eggs, cheese and ham. Add flour and baking powder. Add 1/4 cup melted butter and cottage cheese. Melt 1/4 cup butter in bottom of 9"x13" pan and add egg mixture. Bake 40 to 45 minutes at 400 degrees.

This is my GO-TO recipe. I raise chickens so always have surplus eggs. We eat this 1/week and often bring it to potlucks. I rarely add meat, and I never add the flour cuz it's always too full of other vegetables (broccoli, zucchini, onion, kale) and isn't necessary. And I switched the recipe from cottage cheese to cutting up a brick of cream cheese into cubes. It's delish......and I ALWAYS get compliments. So easy, also GLUTEN-FREE if you don't add the flour.

Fabulous recipe! I add a small can of chopped green chilies and sometimes leave out the ham if I don't have any. Great as leftovers, too.

Wow! This is really good! I changed it some: 9 eggs, used ricotta cheese, purple onions, garlic, 1/4 cup flour and 2 tbsp. used bacon grease with the melted butter! Really good!
