Make your own pie crust or 2 sticks crust mix. 6 tart apples, peeled & sliced (4 1/2 c.) 1/3 c. water 3/4 c. sugar 3/4 tsp. cinnamon 1-2 tbsp. cornstarch 2 tbsp. water 1/4 c. currant jelly (beaten with fork) 1 pkg. meringue mix or 2-3 egg whites Heat oven to 400 degrees. Mix crust and sugar until crumbly. Press into bottom of square 9" x 9" x 1 1/3" pan. Bake 15 minutes; cool. (Crust will not be brown.) Remove and reduce heat to 375 degrees. Combine apples, 1/3 cup water, 3/4 cup sugar, cinnamon and jelly in saucepan. Cook slowly, uncovered until apples are tender. Pour over crust, cover with meringue and bake to delicate brown. |
