POTATOES ALASKA 
Packaged instant mashed potatoes (4 servings)
2 tbsp. butter
2 egg yolks
2 tbsp. chopped green onion or other onion
1/2 tsp. salt
Dash of pepper
2 egg whites
2 tbsp. mayonnaise or salad dressing
1/2 tsp. lemon juice

Prepare instant mashed potatoes according to package directions, omitting the milk called for. Add butter, egg yolks, green onion, salt and pepper to mashed potatoes and mix well.

Spoon 6 mounds onto foil covered baking sheet. Beat egg whites until stiff peaks form; fold in salad dressing and lemon juice. Top each potato mound with egg white. Bake at 350 degrees for 10-12 minutes or until egg whites are golden. Makes 6 servings.
