JANE'S CUCUMBER OR ZUCCHINI
RELISH
 
8 c. shredded zucchini
1 c. shredded onion
2 c. red bell peppers (chopped)
2 c. green bell peppers (chopped)
1 tbsp. turmeric
1/2 c. salt
1 tbsp. mustard, tied in bag
2 sticks cinnamon
2 tbsp. whole cloves
2 tsp. whole allspice
1-2 c. brown sugar
4 c. white vinegar

Tied in bag.

Wash and grate vegetables, sprinkle with turmeric. Dissolve salt in 8 cups cold water. Pour over vegetables and let stand 3-4 hours. Drain and cover with cold water (ice). Let stand 1 hour - drain. Tie spices in bag, put in with sugar and vinegar and bring to boil. Pour over vegetables and let stand 12-18 hours. Put all on stove and simmer until hot. Pack in jars and seal. Yields 6 quarts relish.
