ORANGE BEETS 
1 tbsp. cornstarch
1/4 tsp. salt
1 tbsp. butter
1 (1 lb.) can or jar beets (drain and save juice)
1 tbsp. vinegar
2 tbsp. orange marmalade

Blend cornstarch and salt into melted butter. Add 1/2 cup liquid from beets. Cook until thickened, stirring. Add vinegar and orange marmalade; heat until blended. Add drained beets. Simmer 5-10 minutes.
