KOLBASZ, GREEN PEPPER & TOMATOES

1/4 c. butter or bacon grease
4 med. green pepper, sliced
2 lg. onions, sliced thin
4 lg. tomatoes or 1 qt. canned tomatoes
Salt and pepper to taste
Just a pinch of paprika
1 lb. cooked Kolbasz

In a skillet with a tight cover add butter, when melted put in green pepper and onions and spices. When onions are transparent and mildly soft, add tomatoes and Kolbasz. Simmer for at least 15 more minutes.

VARIATIONS: Cabbage may be sliced thin and added to green peppers and onions. Cook sausage or wieners may replace Kolbasz. This may be served over noodles or rice or just with thick slices of fresh butter bread. Mill workers like this hearty dish.
