GREEN TOMATOES AND GREEN PEPPERS
IN A CROCK
 
Green tomatoes, sliced
Green peppers, sliced
Dried mint
Dried basil
Salt

Any amount that you have available of the above. Put a bunch of mint in the bottom of crock. Add about 2 inches of sliced tomatoes, and about 2 inches of sliced peppers. Top with mint and basil. Sprinkle salt over all. Keep making layers until all tomatoes and peppers are used, ending with basil, mint and salt. Cover with cloth, put dish on top, then add something heavy (like a rock) on the dish to weigh it down. Keep in cold area. Takes about 3 to 4 weeks until ready to eat. Check every week. Clean off scum and wash cloth and dish.
