AUNT SUSAN'S FUDGE | |
3 c. sugar 1/2 c. corn syrup (light Karo) 1 c. milk or cream 3 tbsp. cocoa 4 tbsp. butter 2 tsp. vanilla 1 c. nuts, or more Mix sugar, syrup, milk or cream, and cocoa together. Stir this mixture over low heat until sugar is dissolved. Keep sides of pan wiped down with damp cloth. Now increase heat and do not stir again so that it comes to a rolling boil. As soon as rolling boil is reached, begin testing for soft ball stage in cold water. When a small bit dropped into cold water forms a SOFT ball (a ball that barely holds together). Turn out fire and add butter and vanilla. Set aside and let stand until lukewarm. Beat until thick and creamy. Can use mixer until it thickens. Add nuts and finish beating with wooden spoon. When it gets dull pour out into greased pan. |
