ZUCCHINI CASSEROLE 
2 lbs. zucchini, sliced, cooked, drained and mashed; leave skin on
3 eggs, beaten
1 sm. grated, onion, or 2 tsp. instant dry onions
1 c. grated cheese
1/4 c. cooking oil
Dash of garlic powder
Salt
Pepper
10 to 12 soda crackers, crumbled

Mix all together; place in casserole. Bake for 30 minutes at 350 degrees or until firm and browned.
