ZUCCHINI CASSEROLE 
2 c. cooked zucchini
1 c. Cheddar cheese, grated
1 egg, beaten
3/4 c. milk
1/4 tsp. salt
1 green pepper, chopped
6 saltine crackers

Mix all together. Pour in buttered casserole - sprinkle with Parmesan cheese. Bake in 425 degree oven for 45 minutes.
