CREAM CHEESE APPLE OR PEACH PIE 
In a large bowl mix:

1 (8 oz) pkg cream cheese
1/4 cup cream or 1/2 & 1/2
3/4 cup white sugar
1/2 cup brown sugar
1/2 cup flour
1 egg
1 1/2 tbsp. cinnamon (2 t if you like cinnamon)
1/4 tsp. nutmeg or allspice
1 tsp. vanilla extract (1 tsp. peach extract & 1/2 tsp. vanilla if using peaches)
1/4 tsp. salt
3/4 cup unsalted nuts (pecans, walnuts, sliced almonds, pine nuts, or combo)
1/2 cup chopped dried fruit (cherries, Craisins, or raisins) (optional)

Mix well. It's ok if you still have smallish chunks of cream cheese.

Then add and mix to coat:

5 - 6 cups Granny Smith Apples or fresh peaches

(Need 2 - 9" Pie Crusts - Buy or make your own).

Spray 9-inch pie dish with Pam. Line dish with one pastry crust. Add apple or peach mixture. Dot with butter. Cover with second crust. Make slits in crust. Crimp edge with fork and trim excess with knife. Brush crust with egg and about 1 tablespoon of milk.

Bake on center rack for 35 minutes at 400°F and then 15 minutes at 375°F (until crust is golden brown).

I live in Denver and usually add 5-10 degrees to the temperature, or add 5-10 minutes to the bake time because of the altitude.

Put on a wire rack and let cool. (This part normally gets skipped at our house)
