MY AUNT CLARA'S PINEAPPLE BRAN
MUFFINS
 
1 c. All-Bran cereal
1 c. (8 1/4 oz.) crushed pineapple
1/4 c. raisins
1/4 c. oil
1 egg
2 tbsp. milk
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. brown sugar

Combine All-Bran, milk, pineapple, and raisins. Add oil and eggs; mix well. Combine flour, baking powder, salt, soda, and brown sugar. Add to first mixture and mix until dampened. Pour into paper-lined muffin cups. Bake at 400 degrees for 25 to 30 minutes. Makes 12 muffins.

My family LOVED this recipe. I try to cut down on sugar in our diet, so used 1/4 cup Agave instead of the brown sugar. Also added nearly 1/2 cup 0% Greek yoghurt -- helps with texture and moisture. We also like chopped dates and chopped walnuts, so I added 1/4 of each to the above recipe.
