ZUCCHINI CASSEROLE 
2 lbs. zucchini
2 eggs
1 c. evaporated milk
1/2 c. diced onion
Salt and pepper to taste
1/4 c. butter
1 c. shredded Cheddar cheese cracker crumbs

Cut squash in fourths and cook. Mix eggs, milk, onions, butter and half of Cheddar cheese, cracker crumbs. Mix with squash, pour into greased casserole. Cover with remaining crumbs. Bake at 350 degrees for 30-35 minutes.
