BAKED SQUASH CASSEROLE 
2 lbs. squash, zucchini, yellow or both
1/4 c. diced onion
1 tsp. salt
3 eggs
1 tbsp. Tabasco sauce
1 tsp. parsley flakes
Dash of pepper
2/3 c. melted butter
1 1/2 c. cracker crumbs

In saucepan, slice squash, diced onion, salt and nearly cover with water. Boil until tender. Drain off 2/3 of the water and put into an 8x8 inch baking dish. Be sure to butter the dish.

Mix eggs, Tabasco sauce, parsley flakes, and pepper. Beat well and pour over the squash. Mix cracker crumbs and butter and sprinkle over top of casserole. Bake at 300 degrees for 30 minutes.
