TACO BAKED POTATOES 
4 med. baking potatoes
Vegetable oil
1 lb. ground chuck or ground beef
1/2 c. chopped onion
1 (1 1/4 oz.) pkg. taco seasoning mix
1 c. water
1/4 c. sour cream

Wash potatoes. Dry, then rub with oil. Bake at 400 degrees for one hour or until soft when pierced with fork. Cook ground meat and onion in large skillet until beef is brown, stirring to crumble. Drain well. Add seasoning mix and water. Reduce heat and simmer 15 to 20 minutes, stirring occasionally. Split tops of potatoes lengthwise and fluff potato with fork. Spoon topping over potatoes. Top each potato with 1 tablespoon sour cream.
