POTATO-TACO CASSEROLE 
Spray casserole dish with Pam. Slice 3-4 medium potatoes in bottom of casserole dish. Add 1/2 cup diced onion and dot with 3 tablespoons butter. Salt and pepper to taste. Mix 2 tablespoons flour with 1 cup milk and pour over potatoes. Add 1/2 cup shredded cheddar cheese if desired.

Brown 1 1/2 pounds ground chuck and drain. Add 1 package taco seasoning mix and 1 package Beefy onion dry soup mix. Add 1/2 cup water.

Spread over potatoes and bake at 400 degrees for about 1 hour. Or microwave for 25 minutes at 60% power then brown in oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
