SPINACH SPECIAL 
2 lbs. ground beef chuck, crumbled
2 tbsp. olive or salad oil
2 med. onions, finely chopped
2 cloves garlic, minced or mashed
1/2 lb. mushrooms (optional)
1 1/4 tsp. salt
1/4 tsp. each nutmeg, pepper and oregano
2 pkgs. (10 oz.) frozen chopped spinach, thawed and well drained or 1/2 lb. fresh spinach, chopped
4-6 eggs

Brown ground beef well in oil in a large frying pan over high heat. Add onions, garlic and mushrooms (if used); reduce heat and continue cooking, stirring occaSionally, until onion is soft. Stir in seasonings and spinach; cook for about 5 minutes longer. Add eggs; stir mixture over low heat just until eggs begin to set.
