NEW GREEN BEAN CASSEROLE 
1/2 lb. bacon (about 8 slices)
1 onion, chopped

In pan cook bacon until crisp, reserving 2 tablespoons of grease for sauce mix. Fry onion until cooked and caramelized. Set aside.

SAUCE MIX:

2 cans cream celery soup
2 cups milk
1 (8 oz.) pkg. white NY sharp cheddar cheese, grated
1 tbsp. butter
2 tbsp. reserved bacon grease
1 heaping tbsp. all-purpose flour
salt and pepper, to taste

In a saucepan, add soup, milk and cheddar cheese, butter, bacon grease and flour, stir together and heat on medium heat, stirring often until thick and bubbly. Set aside.

BEAN MIX:

3 cans green beans, drained
8 slices cooked crisp bacon
1 chopped caramelized onion

In large baking dish for oven put in bean mix: green beans, chopped crisp bacon and caramelized onions. Then pour SAUCE MIX over and toss until everything is coated.

TOPPING:

1/2 can French's fried onion rings (or more, if desired)
14 saltine crackers, smashed and mixed with 2 tbsp. melted butter

Mix together French's fried onion rings and smashed cracker mix and sprinkle evenly over top.

Bake in 350°F oven for about 35 to 40 minutes or until golden brown on top.
