DIANNE LONGHENRY'S POPOVER PIZZA | |
1 lb. ground beef 1 lg. onion, chopped 1 can pizza sauce 1 sm. can mushrooms 1 pkg. Mozzarella cheese, sliced 2 lg. eggs 1 c. milk 1 tbsp. oil 1 c. flour 1/2 tsp. salt Parmesan cheese for topping Brown beef and onion in large skillet, pour off fat. Add mushrooms and pizza sauce. Simmer 5 minutes. Spoon into 9x13 inch pan, top with Mozzarella. Place in 400 degree oven to melt cheese. In blender, beat eggs, milk and oil. Add flour and salt. Blend until smooth. Pour over hot pizza filling, covering it completely. Sprinkle with Parmesan cheese. Bake for 30 minutes at 400 degrees. Cut into squares and "pop over" to serve. Makes 6 servings. |
