BLACK BOTTOM CUPCAKES 
1 (8 oz.) pkg. cream cheese, softened
1 egg, slightly beaten
1/3 c. sugar
1/8 tsp. salt
1 c. chocolate chips
1 c. sugar
1 1/2 c. flour
1/4 c. baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/2 c. oil
1 tbsp. vinegar
1 tsp. vanilla

Mix first 4 ingredients and add chocolate chips. Set aside, this is the filling. Mix remaining ingredients. Line 18 to 20 muffin cups with foil or paper liners. Drop 2 tablespoons of chocolate mix in bottom of muffin cups, then add 1 spoonful of cheese mixture. Bake at 350 degrees for 20 to 25 minutes.
