BLACK BOTTOM CUPCAKES 
1 (8 oz.) pkg. cream cheese
1 egg
1 1/3 c. sugar
Salt
1 (6 oz.) pkg. semi-sweet chocolate morsels
1 1/2 c. sifted flour
1/4 c. cocoa
1 tsp. baking soda
1 c. water
1/3 c. cooking oil
1 tbsp. vinegar
1 tsp. vanilla

Mix cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt in mixing bowl; beat well. Add chocolate morsels. Sift flour, remaining sugar, cocoa, soda and 1/2 teaspoon salt together; add water, oil, vinegar and vanilla. Mix well. Pour into prepared muffin tins until 1/3 full. Top with 1 heaping teaspoon cheese mixture. Sprinkle with additional sugar. Bake at 350 degrees for 30 to 35 minutes. Yield: 18 cupcakes.
