BLACK BOTTOM CUPCAKES 
3 c. flour
2 c. sugar
1/2 c. cocoa
2 tsp. baking soda
2 tsp. vanilla
2 c. water
1 tsp. salt
2/3 c. cooking oil
2 tbsp. vinegar

To make batter, mix ingredients well by hand or electric mixer until well blended. Mixture will be liquid. Fill cupcake liners 2/3 full; set aside.

FILLING:

8 oz. cream cheese
1/3 c. sugar
1 egg
Dash of salt
1 to 1 1/2 c. chocolate chips

Mix the filling ingredients. Drop filling by large tablespoons into each cupcake. Filling will drop to center of batter and then rise. Bake about 20 minutes in a 350 degree oven. Makes around 30 cupcakes. These cupcakes freeze real well, just thaw at room temperature for 30 minutes to an hour.
