BEEF VEGETABLE LOAF 
1 1/2 lbs. ground beef
1 c. cooked rice
1 sm. carrot, pared and grated
5 tbsp. chopped parsley
1/8 tsp. pepper
1 egg
1 sm. onion, chopped
1 tsp. salt
1/2 c. milk
2 tbsp. bottled steak sauce
1 med. size onion, peeled, sliced and separated into rings
1 tbsp. butter

Mix ground beef lightly with egg, rice, chopped onion, carrot, 4 tablespoon of the parsley, salt, pepper and milk until well blended.

Pat into a bowl shaped loaf in a greased, shallow baking pan; mark top deeply into quarters. Bake at 350 degrees for 45 minutes. Brush with steak sauce. Bake 15 minutes longer, or until richly browned.

While loaf bakes, saute onion rings in butter just until soft; sprinkle with remaining 1 tablespoon parsley; toss lightly to mix.

Spoon onions in a mound on top of loaf. Cut loaf into quarters at marks, then slice.
