BEEF-POTATO LOAF 
2 lbs. very lean ground beef
3/4 c. evaporated milk
1/2 c. fine cracker crumbs
1/4 c. catsup
5 tbsp. finely chopped onions
2 tsp. salt
1/4 tsp. pepper
4 c. thinly sliced potatoes
3 tsp. parsley

Combine meat, milk, crumbs, catsup, 4 tablespoons onions, 1 teaspoon salt and half the pepper. Arrange potatoes and rest of onions in a greased casserole. Sprinkle with remaining salt, pepper and parsley. Spread meat loaf mixture over potatoes. Spread top with catsup. Bake at 350 degrees 1 hour or until potatoes are tender.
