HUSH PUPPIES | |
1 2/3 c. yellow corn meal 1/2 c. flour 2+ tsp. baking powder 1 tsp. salt 1/2 c. milk 1/2 c. water 2 eggs, well beaten 1 lg. onion, minced or grated Sift together the cornmeal, flour, baking powder and salt. Add the milk and water. Stir in the eggs and onion. Add more milk if necessary to form a soft but workable dough. Mold tablespoons of dough into 1 1/2 to 2-inch balls. Fry in about 1 inch of hot melted oil until well browned, about 2 minutes on each side. Drain on paper towels and serve hot. Makes 8-10 hush puppies. |
