HOT POTATO SALAD (DIABETIC) 
5 med. potatoes
5 slices bacon
1/4 c. vinegar
1/4 c. water
1 egg, slightly beaten
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion

Peel, half and boil potatoes. Slice when cool. Cook bacon until crisp. Drain, reserving 1 tablespoon fat. Crumble bacon. In skillet, combine fat, vinegar, water, egg, sugar, salt and pepper. Heat an stir until thickened. Add potato, onion and bacon. Mix and heat. Makes 8 servings.
