GERMAN - STYLE HOT POTATO SALAD 
6 bacon slices, cut into 1/2 inch pieces
1 c. chopped onion
3/4 c. vinegar
2 tbsp. sugar
1/4 tsp. pepper
5 - 6 c. cooked, sliced potatoes

Fry bacon over medium-low heat until crisp. Pour off all but 1/4 cup bacon drippings. To drippings in skillet, stir in onion, vinegar, sugar and pepper. Cook and stir over low heat, uncovered, until mixture simmers. Pour over potato slices in bowl and toss lightly to combine. Season to taste with salt. Garnish with crumbled bacon slices. Makes 6 to 8 servings.
