INDIAN PUDDING
2 1/2 c. corn meal
1 tsp. salt
1 tsp. baking powder
1 egg
1/4 c. flour
1 tsp. baking soda
2 3/4 (or 2 1/2) c. buttermilk

Sift together dry ingredients. Stir in egg and buttermilk. Place in a greased coffee can. Put in steamer for 2 hours. Serve warm. Slice and add sour cream and crushed maple sugar (or light brown sugar) to the top. A true Fairbanks likes the sour cream. The "in-laws" seem to prefer sweet cream. 4-6 servings.
