INDIAN PUDDING 
3 c. milk
1/3 c. molasses
1/3 c. yellow cornmeal
1 egg, beaten
1/4 c. sugar
1/2 tsp. ginger
1/2 tsp. cinnamon
2 tbsp. butter
1/4 tsp. salt

Mix milk and molasses in saucepan, add cornmeal. Cook over medium-high heat until thick, stir continually. Usually takes about 12 minutes. Remove from heat.

In a quart casserole dish, combine egg, sugar, ginger, cinnamon, butter and salt. Stir until mixed on the bottom of the dish. Slowly pour the hot molasses mixture and stir until well mixed. Bake at 300 degrees for 1 1/2 hours. Check after 1 1/4 hours.
